Amazing Creamy Polenta | Dinner

Whether for breakfast, lunch, or dinner, as an entrée or side, polenta is versatile, simple, and great for families on a budget. This is a basic recipe, so add spices if you prefer, or a bit of soymilk for a creamier texture.
6½ cups water 2 cups cornmeal 3 tablespoons vegan margarine 1½ teaspoons garlic powder ¼ cup nutritional yeast ½ teaspoon salt
1. Bring the water to a boil, then slowly add the cornmeal to make the polenta, stirring to combine. 2. Reduce heat to low, and cook for 20 minutes, stirring frequently and scraping the bottom of the pot to prevent sticking and burning. Polenta is done when it is thick and sticky. 3. Stir in margarine, garlic powder, nutritional yeast, and salt.
