Black Bean, Corn, and Fresh Tomato Chili | Dinner

Tofutti makes a delicious nondairy sour cream called Sour Supreme, and it can be found in some national grocery store chains. Use it to garnish this deliciously spicy dish!


1 red onion, diced 1 jalapeño, seeded and minced 3 cloves garlic, minced 1 (15-ounce) can black beans, drained 1 (15-ounce) can corn, drained 3 tablespoons chili powder 1 tablespoon paprika 1 teaspoon dried oregano 1 teaspoon ground cumin 1/2 teaspoon chipotle powder 2 cups Vegetable Broth 1/2 teaspoon salt 1/4 teaspoon black pepper

2 cups diced tomatoes 1/4 cup chopped cilantro

4 tablespoons vegan sour cream


1. In a 4-quart slow cooker, add all ingredients except tomatoes, cilantro, and sour cream. Cover, and cook on low heat for 5 hours.

2. When the chili is done cooking, mix in the tomatoes and garnish with the cilantro. Top with vegan sour cream.
