Cherry Snack Cake | Dessert

Incorporating rolled oats, this cake makes an excellent choice for breakfast, but it also works as a snack and it’s delicious.


1 cup rolled oats 1 tablespoon flax seeds 1 1/2 cup whole wheat flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon allspice powder 1/3 cup maple syrup 1/2 cup cherry juice 1 cup pitted cherries 1/2 cup applesauce 1 pinch of salt


1. Put the oats and flax seeds in a food processor or blender and pulse a few times until ground. 2. Transfer to a bowl and stir in the flour, baking powder and baking soda, as well as the allspice powder and a pinch of salt. Add the cherry juice, maple syrup and applesauce. Fold in the pitted cherries and pour the batter into a greased small cake pan. 3. Bake in a preheated oven at 350F for 40-50 minutes or until a skewer inserted in the centre of the cake comes out clean.
