Cilantro-Lime Corn on the Cob | Dinner

This pressure cooker Cilantro-Lime Corn on the Cob recipe couldn’t

be easier—or more delicious! To add a little more kick, increase the

amount of cayenne pepper.


4 ears fresh sweet corn, shucked

1/2 cup water

2 tablespoons vegan margarine, such as Earth Balance

2 tablespoons chopped cilantro

2 teaspoons fresh lime juice

1/2 teaspoon salt

2 teaspoons cayenne pepper


1. Place the rack in the pressure cooker and place the corn on the rack.

Pour in the water.

2. Lock the lid into place and bring to low pressure; maintain pressure for

3 minutes. Remove the pressure cooker from heat, quick-release the

pressure, and remove the lid.

3. In a small bowl, combine the margarine, cilantro, lime juice, salt, and

cayenne pepper until well blended.

4. When the corn is cool enough to handle, spread ⁄ of the mixture on

each ear of corn.
