Cilantro Potato and Pea Curry | Lunch

This spicy dish is a simple curried potato recipe with peas. Turn up

the heat by adding in some fresh chilies, or sweeten it for kids by

adding some pineapple.




Ingredients


3 cloves garlic

1/4 cup water

1/4 cup tomato paste

1 teaspoon minced fresh ginger

2 tablespoons curry powder

2 tablespoons cayenne pepper

1 teaspoon sugar (optional)

2 tablespoons soy sauce

1/2 onion, chopped

1 tablespoon sesame oil

4 medium potatoes, chopped

2 tablespoons olive oil

1 1/2 cups frozen green peas, thawed

1 (14-ounce) can coconut milk

3 tablespoons chopped fresh cilantro


Instructions


1. Combine garlic, water, tomato paste, ginger, curry powder, sugar if

desired, soy sauce, onion, and sesame oil in a blender or food processor

and process until smooth.


2. In a large skillet, sauté potatoes in olive oil for 3–4 minutes, then add

spice mix and peas and simmer, covered, for 10–12 minutes, stirring

occasionally.


3. Add coconut milk and simmer for another 5–6 minutes, stirring well to

combine.


4. Remove from heat and add fresh cilantro.
