Easy Make Pumpkin Chili | Dinner

Pumpkin is typically complemented by sugar, cinnamon, and other

earthy spices, but you’ll see that it’s delicious with a dash of heat, like

chili powder.








Ingredients


2 tablespoons olive oil

1 onion, diced

2 (14-ounce) cans tomatoes

1 cup Vegetable Broth (see recipe in this chapter)

1 medium pumpkin, rind and seeds removed, flesh cut into ⁄ " chunks 1

(14-ounce) can white beans, drained

2 tablespoons chili powder

3 teaspoons cumin

1 teaspoon salt

1/2 teaspoon black pepper




Instructions


1. Add the oil to the slow cooker and sauté the

onion on high heat for 3–5 minutes.

2. Add the rest of the ingredients and cook on low heat for 6 hours.
