Mandarin Cake | Dessert

Mandarins are similar to oranges, but their flavour is a bit different. This cake is easy to make and perfect as a dessert, topped with coconut cream or as an afternoon snack.


Ingredients:

1 cup all-purpose flour 3/4 cup whole wheat flour 1/2 cup brown sugar 1 teaspoon baking soda 1 cup mandarin juice 1/4 cup coconut milk 1/4 cup coconut oil 1 pinch of salt 1 teaspoon vanilla extract


Directions:

1. In a bowl, mix the flours with baking soda, salt and brown sugar. 2. Stir in the mandarin juice, then the coconut milk, oil and vanilla extract. 3. Grease a 9-inch cake pan and pour the batter into the pan. 4. Bake in a preheated oven at 350F for 40-50 minutes, or until slightly golden brown and fragrant.
