Roasted Baby Bok Choy | Dinner

Dark, leafy bok choy is a highly nutritious vegetable that can be found

in well-stocked groceries. Keep an eye out for light green baby bok

choy, which is a bit more tender but carries a similar flavour



2 tablespoons soy sauce

2 tablespoons apple cider vinegar

2 tablespoons sesame oil

1/2 teaspoon garlic powder

1 teaspoon red pepper flakes

3 heads baby bok choy, halved lengthwise


1. In a small bowl, whisk together all ingredients except the bok choy.

2. Place the bok choy in a 4-quart slow cooker and pour the soy sauce

mixture over the bok choy. Cover, and cook on low heat for 3 hours.
