Salted Caramel Tahini Cups| Snacks

These vegan salted caramel tahini cups are incredibly decadent considering all you need to make them is tahini, coconut oil and dates.

WHAT IS TAHINI?

Tahini is made from sesame seeds that have been ground into a thick paste. It’s just like almond or peanut butter but with sesame seeds. You can make your own, buy it online or find it in any well-stocked grocery store. My favourite brand is Arz Fine Foods.

Good tahini should have just 1-ingredient, sesame seeds and it should be creamy, smooth and drippy. It should have an ever so slightly sweet and earthy flavour and it should not be overly bitter.

HOW TO MAKE THESE TAHINI CUPS

There are two parts to these cups, the tahini cup and the sweet, salted caramel date filling. Let’s go through how to make them – it’s fun and easy, promise!

Before you start: Get the dates soaking in a bowl of hot water and prepare muffin liners or silicone baking cups. You can either place the liners on a baking tray or use a muffin tin to keep them in place. Just be sure you can fit the tray in your freezer.


Step 1. Mix the tahini and coconut oil and scoop some into the cups. Freeze the cup bottoms until hardened.


Step 2. Blend the soaked and drained dates with a pinch of sea salt then add to the cups.


Step 3. Pour the rest of the tahini mixture over top and freeze until hardened. Once they’ve hardened, they’re ready to enjoy! Store these little delights in the freezer and enjoy anytime.
