Saucy Vaishnava Veggies | Dinner

These simple, low-fat veggies will fill your kitchen with the smells

and dreams of India as they simmer. Why not pick up a Bollywood

movie to accompany your dinner?


1 (28-ounce) can diced tomatoes, undrained

2 potatoes, chopped small

1/2 teaspoon chili powder

2 teaspoons curry powder

1 1/2 teaspoons cumin

1/2 teaspoon turmeric

1 head cauliflower, chopped

1 carrot, diced

3/4 cup green peas

3/4 teaspoon red pepper flakes

1/2 teaspoon salt, or to taste


1. Combine the tomatoes, potatoes, chili powder, curry powder, cumin, and

turmeric in a large pot. Cover, and cook for 10 minutes.

2. Add chopped cauliflower, carrot, green peas, and red pepper flakes

and cook, covered, for 15 more minutes until potatoes and vegetables

are soft, stirring occasionally.

3. Season with salt, to taste.
