Shredded “Chicken” Chili | Dinner

There are many vegan chicken substitutes on the market, but you can

also use shredded seitan to replace the meat commonly found in this

spicy dish.







Ingredients


1/2 cup diced onion

1/2 cup diced bell pepper 1 (7-ounce) package Gardein Chick’n Strips,

shredded by hand

2 cloves garlic, minced

1 (15-ounce) can kidney beans, rinsed and drained

2 cups Vegetable Broth

1 tablespoon chili powder

1/2 tablespoon chipotle powder

1/2 tablespoon cumin

1 teaspoon thyme

1 tablespoon oregano

1 (15-ounce) can diced tomatoes, drained

1 tablespoon tomato paste

1 tablespoon cider vinegar

1 teaspoon salt




Instructions


In a 4-quart slow cooker, add all ingredients. Cover, and cook on low heat

for 5 hours.
