Southwest Vegetable Chili | Dinner

Southwest cuisine is similar to Mexican food and includes a wide

variety of peppers, such as the jalapeños, bell peppers, chipotle, and

chili powder found in this recipe.


1 (28-ounce) can diced tomatoes

1 (15-ounce) can red kidney beans

1 onion, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

1 zucchini, chopped

1 squash, chopped

1/4 cup pickled jalapeños, chopped

1/8 cup chili powder

2 tablespoons garlic powder

2 tablespoons cumin

1 teaspoon chipotle powder

1/8 teaspoon dried thyme

1/4 teaspoon black pepper


In a 4-quart slow cooker, add all ingredients. Cover, and cook on low heat for 5 hours.
