Spicy Summer Squash Sauté | Dinner
Green zucchinis and yellow squash absorb the spicy flavours in this
recipe like magic, though little enhancement is needed with their
fresh, natural flavour. Toss these veggies with some cooked orzo or
linguine to make it a main dish.
1 onion, chopped
2 cloves garlic, minced
2 tablespoons olive oil
2 zucchinis, sliced into coins
2 yellow squash, sliced thin
1 large tomato, diced
2 teaspoons Italian seasoning
1 tablespoon nutritional yeast
2 teaspoons hot sauce
1. Sauté onion and garlic in olive oil for 1–2 minutes, then add zucchinis,
yellow squash, and tomato. Heat, stirring frequently, for 4–5 minutes until
squash is soft.
2. Season with Italian seasoning and heat for 1 more minute.
3. Stir in nutritional yeast and hot sauce.
