Spicy Sweet Potato Chili | Dinner

Sweet potatoes are great sources of fibre and beta carotene, making

this hot chili healthy and delicious.


1 red onion, diced

1 jalapeño, seeded and minced

3 cloves garlic, minced

1 (15-ounce) can black beans, drained

1 sweet potato, peeled and diced

3 tablespoons chili powder

1 tablespoon paprika

1 teaspoon dried oregano

1 teaspoon ground cumin

1/2 teaspoon chipotle powder

1 (28-ounce) can diced tomatoes, drained

2 cups Vegetable Broth

1/4 teaspoon black pepper

Juice of 1 lime

1/4cup chopped cilantro


1. In a 4-quart slow cooker, add all ingredients

except the lime and cilantro. Cover, and cook on low heat for 8 hours.

2. When the chili is done cooking, mix in the lime juice and garnish with

the cilantro.
